I want to share this amazing recipe. Risotto is labor intensive but totally worth it.
You can make it from different ingredients and my very favorite is Mushrooms.
What we need
1 medium onion
freshly ground Pepper
Broth.
Olive oil
Arborio Rice
Butter
I glass of white wine
Porcini mushrooms
Fresh Mushrooms
Pasmigiano Reggiano Cheese
Salt
First things first.
Dice the onion
Porcini mushrooms shred in smaller pieces and soak in water (1 cup of water pretty filled with mushrooms ) This is one of the most important ingredients, it gives it the color and an amazing flavor...

Heat olive oil and add diced onions until white |
Add broth one spoonful at a time, must be hot! |
The beer is not part of the ingredients.. |
When you have all ingredients ready, heat the pan with olive oil and add the onions until white. Add the rice and we have to make sure we don't burn anything on the pot by moving the ingredients constantly. Is going to get steamy so be careful.

After adding broth add the fresh mushrooms... |
Add a glass of white wine |
when you can see the bottom of the pan for a moment it's time to add the cheese and this is 20 minutes. |
Add the cheese and turn it off. |

Serve hot and add more cheese if you want...
The process will take 20 minutes on the stove. This does not include preparation time
