My grandmother used to do this green rice as a complete meal adding at the end a can of tuna and melted cheese on top. I love it.
Ingredients for green Rice
1 cup of parboiled rice
salt
1 clove of garlic
1 can 13 1/2 oz of leaf spinach and same measure of water
1 spoon of oil
Open can of leaf spinach
place oil, garlic and turn on the range at high temperature, add rice and mix
add content of the can and water, let it boil, mix and cover and lower temperature to a minimum for 20 minutes.
Mix after about 10 minutes and cover again for another 10 minutes
1 -2 chicken breast cutlets
thyme
2 spoonful of oil
1 small onion
2 cloves of garlic
a slice of green pepper
1 spoon full of soy sauce
matchstick carrots or any other colorful veggie.
Thaw chicken breast and season with thyme.
Heat oil - medium high - add onion cut in 8 or 10 cook until it gets white
add chicken, garlic, pepper and veggies, soy sauce for about a minute
lower to medium low and cover for about 7 minutes and turn chicken around for another 7 minutes.
Let sit for about 5 minutes and serve.
